Easter (Ostern in German) is a wonderful celebration that lets people know that spring has come. As you may know, Easter is the first Sunday following the first full moon after March 21. This year it will fall on April 12. Every year in March a great variety of rabbit (symbol of fertility) motif confectionary and colorful eggs line the shelves in super markets.
And on Easter Sunday, the colorful eggs are hidden in the yard or at parks, and children and adults run about looking for these eggs.
Colorful eggs are essential for these celebrations. But in Germany organic Easter eggs were not yet available in 2008. This is because the EU's Organic Regulation board had not permitted the additives necessary to color and preserve the eggs.
This year, a supplementary provision has been added, allowing the use of natural pigments and lacquer made of natural materials to make and sell colorful organic Easter eggs during a "traditional period" meaning 1 week leading up to Easter.
It looks like this Easter we will be able to enjoy an organic brunch of colorful eggs and bread baked to look like a bird's nest.
